If you are looking to be an Engineering Assistant you will probably have looked at what type of engineering you are most interested in according to what you have studied, this could be electrical engineering or mechanical engineering for example.
Before writing any cover letter you need to have all the information you want to include with you first to refer to. That includes any education qualifications you want to include and past work history, things that are most relevant to the job that you are applying for.
Once you have all the information you need, you can refer to an example cover letter here below:

Application for the role of Engineering Assistant
I would like to submit my CV in application for the role of Engineering Assistant that you have got advertised in (which publication and when).
I have always had a keen interest in Engineering from a young age and have recently completed my degree in Mechanical Engineering and I am now looking for a first position as an engineering assistant.
As part of my degree I completed a year’s industry experience working at (name of company, doing what) which I thoroughly enjoyed and felt that I learnt a lot during this time. I am now keen to get going on my career and was really pleased to see the role that you have got advertised.
I have done some research into your company and feel that I have a lot to offer your company and I would like to train and develop my skills with you.
I am a hard working individual with a real passion for work and I have no restrictions on my time. I am very thorough and like to put 100% into everything that I do.
I have enclosed my CV for your consideration. Should you have any questions about my skills or history, please do not hesitate to contact me.
Thank you for taking the time to read my letter and CV and I look forward to hearing from you.
